  1. 500gr of fresh mackerel (about 4 large filets), with skin and bones removed (preferably), cut into small pieces about 1 santemeter in size.
  2. Melt coconut oil in the large frying pan, add chopped onions and a little bit of salt. Simmer on the medium heat for about 10 minutes.
  3. When the onions soften and getting golden, add carrots and simmer for another 5 minutes.
  4. When carrots getting a bit softer, add mackerel pieces, rest of the salt and black pepper. Mix everything well. Cover with the lid and live to simmer for another 10 minutes, mixing every 3-4 minutes.
  5. Live it to cool it down for 20-30 minutes, then put mackerel in the food processor, add butter and blend it until smooth or your desired consistency.
  6. Transfer pate in the 3 (200gr) pre washed, sterilised jars (if you like) and refrigerate. I prefer to store pate in a few smaller jars, it is handier in use. But you may use bigger jars if you like.
Recipe Notes

 

Also delicious made with smoked trout or smoked salmon instead of mackerel.

Season and transfer to a serving bowl.

You may skip blending mackerel at the end and just transfer the fish in the bowl. Season with some herbs like dill or parsley and serve with bread, crackers, vegetable pieces or salad etc.
